Cajun Lentil Patties - Vegan

2 cups of lentils, cooked according to instructions1 cup soft tofu1 medium onion, diced6 medium mushrooms, diced1 medium carrot, grated2 cloves garlic, diced1 teaspoon Cajun seasoninghalf teaspoon Italian mixed herbssaltfreshly gound black pepperOlive oil for frying
Fry the mushroom in the olive oil for 5 minutes, stirring regularly. Add the grated carrot, onion and garlic and cook for another 5 minutes. Add the lentils, tofu, Cajun seasoning and herbs.
Cook for 10 minutes stirring regularly. The mixture will all clump together.
Season with salt and freshly grated black pepper.
Leave to cool.
When cool enough to handle shape into small patties.
Fry in a small amount of olive oil for 5 minutes on each side.

Yum. Flavor is so good; the amt water can vary, depending on how watery the veggies are, how well tofu drained, My final glop, before forming into patties, to be too gooey. I added maybe 1/4 cup gluten free bread crumbs, but they still weren't firm enough and fell apart. Still will def make again - 5/23/14
