Quinoa Salad

Ingredients
1 cup dry quinoa, cooked according to package directions1 package Trader Joe's Baked Tofu, savory flavor (or homemade tofu from your farmers market, which I am luck to have!)1 Tbsp olive oil1/4 cup fresh basil (with or without flowers)1 Tbsp rice wine vinegar or lemon juice1/2 pint grape or cherry tomatoessalt to tastebalsamic glaze (optional)
Directions
Cook quinoa according to package directions. Cube or crumble tofu into bowl, add tomatoes whole or chop as desired, combine with remaining ingredients. Salt to taste. Drizzle with balsamic glaze. (optional) Serve immediately or chill.

Serving Size: 4-6 servings, depending on whether you will use it as a meal or a side dish.
