Homemade Low Carb Mayonnaise

Ingredients
1 jumbo or extra large egg1/2 tsp. salt1/2 tsp. ground mustard2 tsp. lemon juice1 tbsp. white vinegar1/2 cup extra light olive oil
Directions
Mix together in a blender or food processor. Blend together until smooth and the oil is emulsified (mixed in).

Serving Size: Makes 16-20 one tablespoon servings

    This turned out really good, a little thin, I thought I would try using half olive oil and half coconut oil and see if that helps it thicken up a bit... but the taste is awesome! - 2/25/16
