Baked & Loaded Denver Omelet

Egg, fresh, whole, raw, 8 largeMilk, 1%, .25 cupfresh onion, .25 cup, choppedTomatoes, 1 medium, choppedMushrooms, fresh, 0.5 cup, pieces or slices Bell Pepper, fresh green, .25 cup, choppedBacon - Jenny O Extra Lean Turkey (8 slices) dicedCanola Oil, 1 tbsp American Cheese Slices (4 slice) cut in halfSalt 1 tsp (to taste)Pepper, black, .25 tsp (to taste)
Saute all the veggies in the oil until tender/soft. Set aside to cool completely.
Preheat oven to 400 degrees. Spray 10 inch round cooking pan.
Mix the eggs & milk together.
Add all the veggies to the egg mixture.
Add the chopped turkey bacon & mix well.
Pour egg mixture into prepared pan.
Bake for 25-30 minutes or until eggs are set & lightly browned.
Turn off oven.
Place cheese on top & leave in the oven until melted.
Serving Size: Make 8 servings (1 wedge each)
