Sauteed Beet Greens

1 T olive oil2 Garlic cloves, minced.5 red bell pepper6 C beet greens and stems2 T red wine vinegar2 T lemon juiceBlack pepper
Rinse beet leaves and stems to remove grit but do not dry. Remove stems. Chop leaves. Separately chop beet stems.
Heat olive oil in lg skillet. Add garlic and red pepper. Saute until oil is fragrant and garlic begins to turn colour, about 1 min.
Add beet greens and stems season with pepper n cook stirring occasionally until nearly tender, 2 to 3 min. Add beet leaves nd vinegar and cook prtially covered, 3 to 5 min to desired tenderness. Remove from heat and season with lemon juice.
Serving Size: One third.
