Super Maui Brownies

Ingredients

¼ cup canola oil2 oz unsweetened chocolate2/3 cup cane sugar or brown sugar2 egg replacers¼ cup unsweetened applesauce½ cup crushed pineapple, drained1 tsp vanilla½ cup all-purpose flour½ cup buckwheat flour½ tsp baking powder½ tsp baking soda¼ tsp salt1/4 cup chopped macadamia nuts1 ½ cups icing sugar5-6 tsp coconut milk
Preheat oven to 350F.
Combine oil and chocolate in saucepan and melt over low heat.
Beat together sugar and egg replacers.
Add chocolate mixture and applesauce, beat well.
Mix in pineapple and vanilla.
Combine flours, baking powder, baking soda and salt.
Stir into chocolate mixture until just combined.
Stir in chopped macadamia nuts.
Scrape into a thoroughly greased 9” pan.
Bake 30 minutes and cool completely.
In a small bowl, mix together the icing sugar and coconut milk until spreadable.
Spread over cooled brownies and chill until set.
