Granulated Sugar, 1 cup (185 gm)Apples - 2 medium to large (185 gm)Walnuts, 1 cup, chopped (110 gm)Cream of Rice Cereal, 4 tbspEgg, fresh, whole, raw, 4 largeHeavy Whipping Cream, 8 fl ozPowdered Sugar, 3 tbspCocoa, dry powder, unsweetened, 3 tbspVanilla extract 1 Tbsp
Before you start
Separate eggs (save yolks) and whip the whites to stiff peaks.Chop the walnuts, peel, core and shred the apples.
Cream yolks and sugar til creamy. Add apples, cream of rice and cocoa powder until well mixed. Fold in the whipped egg whites and nuts. Grease and flour (gluten free flour) a spring form pan. Bake 335 degrees for 30-45 minutes. Let cool then put in freezer for easy removal from spring form to decorative cake tray.
For the whip cream frosting. Whip the 8 oz of heavy whipping cream with 1 T vanilla extract and 3 tablespoons of powdered sugar until thick. Frost the cake.
