BTA Scramble - 7 g Net Carbs

Ingredients
8 eggs2 cups cherry or grape tomatoes8 slices cooked, crumbled center cut bacon OR 8 tablespoons precooked real crumbled bacon (not bacon bits)1/2 cup diced avocado1/2 cup fresh pico de gallo (available at most grocery stores) or salsa of your choice
Directions
1 - Spray a medium skillet with non-stick spray and heat over MEDIUM-HIGH heat until a drop of water bubbles and quickly evaporates.

2 - Add tomatoes to skillet. Cook and stir until tomatoes begin to burst, about 5-10 minutes. Add crumbled bacon to skillet and stir together bacon and tomatoes.

3 - Whisk together eggs, salt & pepper. Pour into skillet with bacon and tomatoes. Stir occasionally until eggs are fluffy and set. Remove from heat.

4 - Top each portion with about 2 tablespoons each diced avocado and pico de gallo and serve!
