Chicken Fajita Scramble - 7 g Net Carbs

Ingredients
1 cup bell pepper (green, red, yellow or a mix), sliced into strips1 cup onion, sliced into strips8 oz. cooked skinless, boneless chicken breast, sliced into strips4 teaspoons fajita or taco seasoning mix8 eggsSour cream, guacamole, warm tortillas (optional)*
Directions
1 - Spray a medium skillet with non-stick spray and heat over MEDIUM-HIGH heat until a drop of water bubbles and quickly evaporates.

2 - Add bell pepper and onion to skillet and sauté until crisp-tender. Add chicken strips to skillet and sprinkle with seasoning.

3 - Whisk eggs. Pour over vegetable and chicken mixture. Stir occasionally until eggs are fluffy and set.

4 - Serve with sour cream, guacamole, and warm tortillas, if desired.
