Chicken and Vegetable Stuffed Portobella mushroom caps

Ingredients
Mixture of yellow, red, and orange bell pepperFresh Spinach leafsBrown riceItalian cheesesChicken BreastPortobello Mushroom Caps
Directions
Boil Chicken with seasoning, so that you can shred it.
Once cooked shred
Mix together all ingredients in a bowl'
spray cookie sheet with olive oil
Add salt and pepper to taste
Stuff each mushroom cap and sprinkle a little cheese on top
Bake at 325 for 10-15 min until cheese is melted
Pair with a veggie or a nice side salad
