Breakfast Frittata

Ingredients
Egg Yolk, 2 large Egg white, large, 5 serving Onions, raw, .5 cup, chopped Green Peppers (bell peppers), 0.25 cup, chopped Scallions, raw, 1 medium (4-1/8" long)Bacon grease, 1 tsp
Directions
Heat oven proof skillet on stove top at med high
add Bacon Grease to oven proof skillet
add raw veggies to oven proof skillet, stir fry until translucent 7 mins
beat eggs with fork, 50 count
spread veggies evenly around the skillet
pour eggs on top of skillet
turn on oven broiler to lowest setting
cook on stove until the middle is cooked, the edges will likely remain liquid egg.
place oven proof skillet on middle rack directly beneath broiler flame, spin handle to side out of direct heat.
cook until center of egg is light brown and sides are cooked.
