Garlic Mashed Potatoes

Ingredients
8 cloves garlic2 large potatoes, scrubbed1/2 cup 1% cottage cheese1/2 cup vegetable brothsalt & pepper to taste
Directions
Wrap garlic in foil & cook at 350 in oven for 30 minutes. When cool, remove skin.

Chop potatoes (with skin on) and boil until tender.

Mash potatoes, garlic, cottage cheese & broth until smooth.
