1 1/4 cups barley flour1 cup flour1 tsp baking soda1/2 tsp ground ginger1 tsp ground cinnamon1/4 tsp salt1/2 cup shortening 1/3 cup (packed) brown sugar1 egg1/2 cup blackstrap molasses1/4 cup fresh orange juice zest of two oranges1/2 cup dark raisins, soaked and drained
Preheat oven to 350F. Lightly grease two baking sheets.
Combine flours, spices, salt and baking soda in a bowl.
In another large bowl, cream the shortening and brown sugar.
Beat in the egg, followed by the molasses, orange juice and zest.
Gradually blend the flour mixture into the wet ingredients.
Fold in the raisins.
Drop the dough by spoonfuls 3 inches apart onto the prepared baking sheets.
Bake for 10-12 minutes, until lightly coloured but still looking a bit underdone.
Let cool on sheets.
