Roasted potatoes

Ingredients
8 potatoes peeled and cut in fourths.1/2 C olive oil
Directions
Boil the potatoes until just cooked (about 15 minutes)

Coat the bottom of a 9 by 13 pan with half the olive oil.

Pour the rest of the olive oil on the top of the potatoes and brush until covered.

Cook at 350 for 45 minutes or until crispy and brown, turning once.

    I added seasonings: minced garlic and parsley. (It's best if these are fresh seasonings, but they work dried too.)
