Indian carrot and green pepper rice

Ingredients:Cooked brown Rice - 1 cupCarrot - 3 small (1 cup)Capsicum - 1 (1/2 cup)Cashew / Pista - 25g (1oz)Chilli Powder - as per spice level.Salt to tasteOil / Ghee - 1 tspMasala Powder:Fennel Seeds - 1 tspCumin seeds- 1 tspPepper - 1 tspPoppy Seed - 1 tspDry Roast the above ingredients and grind to powder.
Grate the Carrot.
Slice the Capsicum thinly lengthwise.
Heat a pan with 1 tsp oil, add Cashews and saute well.
Add Carrot and Capsicum and saute well.
Add the Masala powder - 1 tsp is enough for a cup of Rice.
Salt to taste and allow the vegetable to cook until its done.
Once the Veggies are cooked add the Rice to it and Mix well.
Switch off the stove, Now its ready to eat or pack in lunch box.
