Cream of Celery Soup

Ingredients
1 qt. vegetable stock1 # celery, chopped2 C. carrots, chopped2 C. onions, chopped2 Tb. olive oil1 Tsp. salt2 Tb. butter1 C. cooked wild rice1/3 C. flour1/4 tsp. white pepper1 qt. 1% milk1 Clove garlic, mincedpinch of nutmeg
Directions
Saute the celery, onion, carrots and garllic in the butter and olive oil until soft. Stir in the flour, and cook until somewhat browned. Slowly stir in the stock and allow to thicken. Add the salt, pepper, numeg, and rice. Add milk slowly, stirring constantly, and warm to serving temperature. Puree if desired.
