We took one bite and our eyes rolled into the backs of our heads as we savored every bite! These are delicious. They freeze great too. I too used fresh bell pepps and onions. Man....these are truly superb! Easy, tasty and just an overall INCREDIBLE recipe! THANK YOU! - 9/20/07

I love these quiche! I used fresh onion and peppers instead. I have even made them without the bacon when I didn"t have it on hand and the quiche were still incredible. - 12/24/09

I just made this and am eating them now! Delicious --- I used turkey bacon and fresh bell peppers, onions & mushrooms (sauteed the veggies a bit in the bacon leavings). Going to refrigerate the rest (and freeze some) for snacks or quick breakfasts later this week.
Thanks for sharing this! Easy! - 2/3/08

I was impressed with how flavorful these were! I used Schwan's roasted peppers and onions. At first I was disappointed with how small these were but the flavor made up for it. I might add some milk next time to puff them up a little. - 3/10/13

I notice that the recipe calls for a 12 cup muffin pan but the number of servings is six. Does this mean you get two per serving? Soounds like a great recipe, I'm anxious to try it! - 4/30/10
