Low Carb Cottage Cheese pancakes

Ingredients
1/2 cup 1% cottage cheese1/2 cup oats1/2 tsp baking powder2 large eggs1/2 tsp vanilla extract1 packet artificial sweetner
Directions
Blend all ingrediants in blender; let stand 5 minutes to thicken. Melt coconut oil in frying pan. Add 1-2 tbsp of mixture in pan. Flip after 1 minute, or golden brown. May have to flip three times in total for fully cooked pancakes
