I stated chicken broth but I wound up boiling a couple of skinless chicken breast in water (enough to cover the chicken and added about a half inch more above it) mixed with all of the above ingredients and some salt, pepper, cayenne, and a pinch of cinnamon. I removed the chicken breast and blended everything else together to make a creamy soup.
I couldnt even tell that I didnt use a premade chicken broth. Tastes great and you have the chicken breast to eat (lightly infused with the soup flavors) or to use in another recipe. I used frozen onions as I didnt have fresh and baby carrots just because those are what I had on hand. you can add more or less of any of the veggies and spices and it would taste great.
Cook until the potatoes are soft and the chicken is cooked through (white inside when cut in half)
Serving Size: makes 4 1 cup servings (about)
