6 oz uncooked whole wheat spaghetti1 tbsp olive oil1/2 lb ground pork sausage2 cloves garlic, minced1 cup pumpkin puree1 c reduced sodium chicken broth1/4 c freshly grated parmesan cheese1 tsp dried sage1/4 tsp salt11/4 tsp pepper
Cook spaghetti according to package directions; keep warm. Meanwhile, heat oil in a large deep skillet over medium-high heat. Add sausage and garlic; cook 6-7 min or until sausage is browned. Reduce heat to medium-low. Stir in pumpkin, broth, Parmesan cheese, sage, salt and pepper; cook 2-3 min or until thoroughly heated. Add spaghetti; toss well to coat.

omit salt. use any pasta you prefer. add 10 oz frozen chopped spinach, omit chicken broth, add 1 can evaporated milk. May substitute cooked and mashed butternut or other winter squash for pumpkin; omit sage, use cinnamon & nutmeg instead. Use diced onion instead of garlic. Kid approved :D - 12/2/16
