Ingredients
Special K Vanilla Almond Cereal, 4 cupFlour, white, 1 cupBaking Powder, 1.25 tspSalt, .5 tspGreek Yogurt, Vanilla, 6 ozApplesauce, unsweetened, .5 cup Butter, salted, 3 tbsp, meltedBrown Sugar, .75 cup, packed1 egg whiteFlax Seed, 3 tbspCashew Nuts, dry roasted (salt added), .5 cup, rough choppedChocolate or white chocolate baking chips, 6 oz.Crush cereal down to fine crumbs, add flour, salt and baking powder. stir to combine. In separate bowl, mix melted butter and brown sugar until creamy, add egg white and vanilla, stir. Combine with dry ingredients, add applesauce and yogurt, mix well before adding flax seeds, cashews and chips. Refrigerate 1 hr before baking.
Directions
Refrigerate for 1 hr before baking. Place by rounded teaspoon fulls on parchment lined sheet. Bake on center rack for 12-13 minutes at 350 degrees, tap down w/ spatula, bake another 2-3 minutes.
