Thai Smoked tofu stir fry

1/2 onionGarlic, 1 clove1T EVOO1 small can mushrooms 2 cups frozen peas1 can waterchestnuts, drained1 bag miracle rice, rinsed and drained8 ounces smoked tofu2-3 tsp sriracha sauce1 tsp thai garlic chili paste1 eggThai Garden dried birds eye chilis, 5-6
Place EVOO in skillet. Add onion and garlic, cook until translucent. Add frozen peas, 1/2 c water, sriracha sauce and garlic paste. Cook until peas are warm, adding mushrooms and waterchestnuts. Add in rinsed, drained miracle rice, some of the soy sauce and chopped smoked tofu.
Hollow out center of pan and crack large egg in center. Leave sit for a minute, covered on low. Scramble egg gently in center until cooked. Stir into remaining ingrediants, add dried chilis and remainder of soy sauce.
Serving Size: makes about 6 one cup servings.
