DRY INGREDIENTS:1/4 cup (28g) coconut flour1 tsp cinnamonpinch nutmegpinch pumpkin spice (optional)1/2 tsp low sodium salt1/4 tsp baking sodaWET INGREDIENTS:1/4 cup (60g) pumpkin3 tbsp (45g) Almond milk (I used unsweetened silk)1 tbsp honey3 eggs (about 145g)1 tbsp coconut oil (melted)1 tsp vanilla
Mix dry ingredients in small bowl set aside. Whisk wet ingredients together in a larger bowl until blended. Add the dry ingredients to the wet ingredients and whisk until blended and most lumps gone. Heat griddle or pan, and either coat with coconut oil, or spray. Use large spoon to put batter in pan and spread out. Cook on each side 2 to 4 minutes on medium heat.
