barley and veggie casserole

Ingredients
1 cup uncooked barley1 envelope Lipton Onion Mushroom soup mix1 cup green beans1/2 cup spinach, chopped12 oz. mushrooms, sliced1/2 cup sweet red bell peppers, chopped4 cups water1 T olive oil
Directions
wash and slice mushrooms, cook in olive oil until all water has been rendered. Add all ingredients in a 3 quart casserole dish, bake 350 fro 1 hr and 15 min. Let sit for 15 min, serve. Makes 5 generous servings if eating alone with a salad, or 10 servings as a side dish
