Mexican Mini Fritatta

Ingredients
Beans, black, .75 cup 1 c egg whites1 tsp Chili powder1 tsp cumin powder1 tsp Mrs. Dash1/4 tsp salt1/4 tsp pepper1/3 c green onions, chopped1 roma tomato
Directions
Preheat oven to 350
Line muffin pan with muffin cups then spray with cooking spray
In a large bowl, beat eggs til even consistancy
Mix in everything else
Fill each muffin tin halfway with mixture (make sure to get a fair amount of the veggies, as they tend to sink to the bottom of the bowl. Makes about 10 fritattas.

Bake at 350 for 20 minutes.
