1 cup Soy Milk1 tsp Cider Vinegar3/4 cup Sugar1/3 cup Canola Oil1 tsp Vanilla Extract1/2 tsp Almond Extract (or more Vanilla)1 cup All Purpose Flour1/3 cup Cocoa3/4 tsp Baking Soda1/2 tsp Baking Powder1/4 tsp Salt
Preheat oven to 350 degrees. Whisk together soy milk and vinegar, and set it aside to curdle. Then add the sugar, oil, and extracts to the milk mixture and beat until foamy. In a second bowl, sift together remaining ingredients, then slowly add them to the wet mixture. Don't over mix. Pour 3/4 of the way into 12 cupcake liners and bake for 18-20 minutes. Let cool on a wire wrack before frosting.

I've made thes with gluten-free flours. Family favourite! Everytime I do cupcakes my kids say: do those chocolate cupcakes! Before christmas parents bake goodies for kindergarten and school x-mas sale, I make these with different frostings and they're first that sell out. Love this recipe! - 10/15/09
