Tex-Mex Luau

Ingredients
2 pounds frozen firm-textured fish fillets, thawed2 onions thinly sliced 2 lemons, divided2 Tbsp. butter, melted2 tsp. salt1 bay leaf4 whole pepppercorns1 cup waterAvocado Sauce:7 1/2 ozs. frozen low-fat avocado dip, thawed1/2 cup fat-free sour cream2 Tbsp. lemon juicehalf small onion, finely chopped
Directions
Cut fillets into serving portions. Combine onion slices and 1 sliced lemon in butter, along with salt, bay leaf, and peppercorns. Pour into slow cooker. Place fillets on top of onion and lemon slices. Add water. Cover. Cook on high 3-4 hours. Before serving, carefully remove fish fillets with slotted spoon. Place on heatproof plate. Sprinkle with juice of half of 2nd lemon & garnish with remaining lemon slices. Serve hot with Avocado Sauce (see below), if desired. Or chill and serve cold, also with Sauce, if you wish.
