Mediterranean Tilapia

Ingredients
6 Gorton's Signature Grilled Tilapia fillets1 cup red, roasted canned pepper cut into strips1/2 pound pancetta cut into small dice4 oz kalamata olives chopped1 oz extra virgin olive oil1 oz balsamic vinegar4 oz feta cheese crumbled
Directions
Place pancetta in a small sauce pan along with olive oil. Over medium heat, cook the pancetta until crisp, about 7 minutes. Add balsamic, peppers and olives and cook for another 2 minutes, and allow to cool to room temperature.

Prepare Gorton's Signature Grilled Tilapia fillets according to package directions. Cool slightly.

Place grilled fillets on 6 plates, top with vinaigrette and sprinkle with feta cheese. Serve immediately.

    SLEZAM1, actually, it is an ad for Gorton's products, and my guess would be that these ads add to financing Sparkpeople so that it is free for us. Just ignore the brands and use any tilapia fillet from the store. The recipe sounds good once you skip the manufacturer's seasoning and sodium. - 6/10/15

    We are having grilled tilapia tonight and it will be seasoned with herbs only. While this looks and sounds good, the calories and sodium in ours will be lower. Might try this recipe for a special meal. - 6/10/15
