Pineapple Upside down cookies

2 cups flour1/2 tsp salt1 cup sugar1 1/2 stick butter, softened1 egg2 tsp vanilla1 cup chopped pineapple4 maraschino cherries
1. In large bowl, cream butter and 3/4 cup of sugar. Add eggs and vanilla. Sift flour and salt together into the bowl.
2. Refrigerate until firm (at least an hour).
3. In saucepan, combine 1/4 cup sugar and pineapple. Cook about 12 minutes on low, until pineapple is translucent and mixture is thick. Add Cherries and cool
4. Preheat oven to 350. Make tablespoon sized balls, then squish them. Fill the indent with the pineapple syrup.
5. Bake for 20-25 minutes, or until the cookies have golden edges
