Bacon & Black Bean Soup

Ingredients
1 package thick-cut bacon, chopped1 onion, dicedgarlic (to taste)1 package sliced baby portabella mushrooms5 cans reduced-sodium black beans, drained but not rinsed2 cans sweet kernel corn, draineddiced chipotle peppers in ancho sauce (to taste)1-1/2 cartons chicken broth
Directions
Start chopped bacon, diced onion, garlic, and mushrooms in a large pot on medium-high heat. Let cook, stirring frequently, until bacon is almost done (maybe 5 minutes). Add beans, corn, and chilies; stir to combine. Add chicken broth. Bring to boil for 10 minutes, reduce to simmer for 20.
