Banana Mouse Pancake

Ingredients
eggs, almond flour, bananas, coconut milk, flour, vanilla extract,honey, baking soda,salt, coconut oil
Directions
place all ingredients except oil in blender. blend on low 10 seconds, high for 30 seconds, batter should be very smooth.

let batter sit for 5 minutes

place oil in shallow skillet or griddle over medium heat

spoon 1.5 tablespoons of batter on hot pan, 2 teaspoons for ears, connecting ears to head.

watch pancakes closely, carefully flip them once bubbles rise to surface, after about 1 minute
