Spinach Pesto

Spinach, fresh, 1 bunch Bread, whole wheat very dry toast, 2 slicesCanola Oil, .25 cupWater, .25 cupGarlic, 1 cloveBasil, 2 tbspParmesan Cheese, grated, low-fat, 4 tsp Black pepper, sprinkle
Thoroughly wash spinach and remove stems. Grind spinach in in food processor. Add garlic, Parmesan cheese, water, oil, basil, and toast. If the mix is too wet, add bread crumbs (toast), if the mix is too dry, add oil and water. If it is too bitter, add a small amount of Parmesan.
Make your own bread crumbs to avoid hydrogenated fats.
Serve cold over pasta. Makes 15-20 servings.
