WI Smoky Hoppin John w/ Italian Sausage

Ingredients
Brown ricewater1 LB Ground Italian Mild Sausage1 1/2 Chopped onion1 diced yellow, red or orange Bell Peppers 2 long Celery stalks sliced small3 tsps. Minced Garlic in water3/4 tsp Salt3/4 tsp smoked paprika1/2 tsp Thyme1/2 tsp Ground Black Pepper3 small cans black-eyed peas 1/4 cup Green Onion tops (green part)
Directions
(Using the clear rice cooker measuring cup) Set 1 1/2 cups brown rice and 3 cups water to cook in the rice cooker. This takes about 55 minutes to cook. Meanwhile, in a large non-stick skillet cook Italian sausage, onion, bell pepper, celery and garlic until sausage is no longer pink. Stir in salt, paprika, black pepper and drained/rinsed black-eyed peas and cook about 2 minutes until heated thorough, stirring occasionally. When done sprinkle with green onions and serve over rice.
