Meringues

Ingredients
4 large egg whites, pinch of salt, 1 cup sugarI used organic eggs, salt, cane sugar.I used organic butter to grease baking sheet
Directions
4 large egg whites, pinch of salt, 1 cup sugar

Mix egg whites on high with electric mixer until soft peaks form (do not over beat)
Add pinch of salt and continue to beat.
Add sugar a little bit at a time, still beating on high, until all sugar is incorporated and you have stiff peaks.

Plop mixture on greased baking sheet or parchment paper and bake in pre-heated oven at 200 F for just over 2 hours. Turn heat off and leave meringues in closed oven overnight. Note: used gas stove so had pilot light heat.

Time-wise: make around 7:30pm, in oven around 8pm, oven off around 10:10pm, out 8am. Meringues should be dry and crispy and not brown.
