Cranberry Pistachio Biscotti

Ingredients
1/4 c. olive oil3/4 c. sugar2 tsp vanilla extract .5 tsp almond extract 2eggs1 3/4 c. flour 1/4 tsp salt 1 tsp baking powder1/2 c. dried cranberries 1 1/2 c. pistachio nuts
Directions
in a large bowl , mix together oil and sugar, until well blended. Mix in vanilla and almond extracts. beat in eggs.
Combine flour , salt and baking powder , and gradually stir into egg mixture. Mix in dried fruit and nuts. divide dough in half, and form 2 logs 12x2 inches on parchment paper and cookie sheets. Bake at 320 degrees, for 30 minutes
remove from oven and place on cooling racks, when completely cool cut on diagonal into 3/4 in slices , lay slices on parchment paper and bake at 325 for 8 to 10 minutes.
