Ingredients
2 tsp unsalted butter4 tilapia fillets (4 oz each)pepper, to taste2 Tbsp white wine2 Tbsp lime juice1/2 cup low sodium chicken broth1 tsp ginger1/8 tsp cayenne pepper
Directions
In a skillet over medium high heat, melt butter. Season tilapia with pepper and saute quickly (2-3 minutes per side); remove from skillet and keep warm. Add lime juice and wine to skillet and using a whisk, scrape up any browned bits from the bottom of the pan. Bring to a boil. Bring to a boil, when add chicken broth, half and half, ginger and cayenne pepper. LOWER HEAT IMMEDIATELY OR SAUCE WILL BREAK! Cook over medium heat for about 2 minutes, stirring constantly. When sauce has reduced and thickened. Serve sauce over tilapia. I also like to make caulilflower on the side and pour sauce over that as well.
