Low Carb Fried Green Tomatoes

3 T arrowroot powder1 egg1/4 cup unsweetened almond milk5 T grated Parmesan cheese3 T coconut flour2 tsp. garlic powder1/2 tsp. paprika1/4 tsp. ground black pepper2 medium green tomatoes, sliced 1/4 in. thick7 T coconut oil
Place arrowroot powder in a shallow bowl. Whisk the egg and almond milk together in a second bowl. Combine the Parmesan cheese, coconut flour, garlic powder, paprika, and ground black pepper in a third shallow dish.
Dip the sliced green tomato slices into the cheese mixture, followed by the arrowroot, making sure to cover both sides. The dip the slice into the egg mixture and a second time into the cheese mixture. Set side on a plate or waxed paper.
heat the coconut oil over medium-high heat. Place a single layer of tomato slices into the pan. Cook on each side until golden brown, about 15 seconds.
Serve at once plain or with a favorite sauce.
