Stuffed Green peppers

1 pound ground turkey1 small onion1 15 oz tomato sauce1 8 oz can tomato sauce1 cup cooked rice (I have typically used white since that is what we like.8 oz mozzarella cheese1 tsp thyme1 tsp oregano1 Tablespoon olive oil3 Tablespoons parsley flakes3 Tablespoons italian seasoning1 tsp minced garlicSalt and pepper to taste (I use about 2 tsp pepper)
Wash rice then Cook 1/2 cup rice to 1 cup water and bring to boil. Cover and cook for 15 min on low. Brown turkey in skillet with finely chopped onion. Season turkey with pepper, a little salt and a few shakes of italian seasoning. Drain if needed. Add tomato sauce and all spices including olive oil and garlic. While cooking turkey, bring large pot of water to a boil. Wash green peppers and slice off the entire top and empty content of pepper and toss. I freeze the good portion of the tops to use later in other dishes. Immerse the entire peppers into the boiling water and cook for 4-5 min. Spray casserole dish with nonstick spray. Use tongs to take peppers out and place them in the dish. Add 4 oz of the cheese to the meat mixture and the cooked rice and stir. Stuff each green pepper until completely full. Add any remaining meat sauce to the casserole dish. Add the rest of the cheese to the tops of the green peppers. (if you like cheese and want more just add in the additional calories and top with more mozzarella or cheddar ) Bake at 375 degrees for 20 min until the cheese is melted. 1 Green pepper per serving.
