Banana Bread Pie

1 cup all-purpose flour3/4 teaspoon baking powder1/4 teaspoon baking soda1/2 teaspoon cinnamon1/8 teaspoon salt1 egg, lightly beaten2 medium ripe bananas, mashed1/2 cup sugar1/4 cup of melted coconut oil1/8 cup of chopped walnuts
Preheat oven to 350 degrees F. Grease a pie pan.
In a medium bowl stir together flour, baking powder, baking soda, cinnamon and salt. Make a well in the center of flour mixture.
In a small bowl combine egg, mashed bananas, sugar and oil. Add liquid mixture to dry ingredients all at once. Stir until just combined. It will be lumpy. Fold in walnuts. Spoon batter into pie pan. Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Cool on wire rack at least 15 minutes and then cut into 10 even pieces.
Serving Size: makes 10 equal cut pieces
