Spicy Chicken Pasta

2 cups cooked whole wheat pasta2 chicken breasts, cut into bite sized pieces2 cloves garlic, diced1 tbsp or less olive oil1 bell pepper, diced2 medium tomatoes, diced (with seeds and juice still intact as much as possible)1 cup spinachOptional: Parmesan cheese, salt, pepper, red pepper flakes, chili powder, cumin, Italian seasoning blend or fresh herbs (none in calculated data)
Boil the pasta as directed. While boiling, heat oil over medium to medium high heat. Add chicken, garlic, and bell pepper. Put the lid on to save the water from evaporating too much. When the chicken is almost done, add the tomatoes and seasonings of your choice. I make this really spicy with a lot of red pepper flake, cayenne pepper, and chili powder. Again, keep the lid on as you are now creating moisture for your pasta. Just before adding pasta add the spinach. Add the pasta and some of the starchy pasta water if you want more liquid (I never need more). Toss and enjoy! Sprinkle with some Parmesan if you would like.
