Low Carb Spinach Souffle

Ingredients
2 tablespoons flour2 tablespoons butter1 cup Half and Half (half milk half cream)1/2 cup whipping cream1/2 cup grated Parmesan cheese1/4 cup onions sauteed (optional)12 oz frozen spinach cooked and drained1/2 teaspoon salt1/4 teaspoon pepper3 eggs yolks beaten3 egg whites beaten
Directions
Preheat oven to 350 degrees. Melt the butter and add flour, stir to make a roux. Add the milk and stir constantly over medium heat. Add seasonings, onions and Parmesan cheese. Once it thickens remove from heat and quickly stir in egg yolks. Don't let them cook-keep stirring until they are blended. Add cooked spinach and stir well. Beat egg whites and gently fold them into the mixture. Pour into a 1 1/2 Quart buttered casserole and bake for 50 minutes or until a sharp knife inserted in the middle comes out clean.
