Mock Pumpkin Pie

Ingredients
1 can (or 2 cups) northern beans1 can evaporated milk3 eggs (or 1 tbl unflavored gelatin)1 tbl pumpkin pie spice1 cup sugar2 pie crusts, frozen
Directions
Puree beans in blender. Add milk, eggs, sugar, and spice and blend until smooth. Pour mixture into two pie shells. Bake in preheated 425F for 15 minutes. Reduce temperature to 350F. Bake 45 minutes or till knife inserted in center of pie comes out clean. Cool, serve with whipped cream.
