German Potato Salad

Ingredients
3 strips bacon, chopped4 red-skinned potatoes, halved and sliced1 cup chopped onions1 Tbsp extra virgin olive oil1 Tbsp white flour1/3 cup white vinegarartificial sweetener equivalent to 1/4 cup sugar (you can use real sugar, but will need to adjust the calorie count)
Directions
Boil sliced potatoes in a pot. Fry bacon in skillet until crisp. Drain bacon on paper towel and discard bacon fat in skillet (a little can remain in pan). Saute onions in remaining bacon fat until browned. Add olive oil and flour, then add vinegar, artificial sweetener, and about 1/2 cup of the potato water. Drain potatoes when tender and add to skillet. Stir until potatoes are well coated with bacon, onions, and dressing. Season with salt and pepper and serve.
