Moe's Eggplant Veggie Fajita Wraps

Ingredients
1/2 c. Eggplant, sliced and diced into small pieces1/2 c. Squash (yellow or zucchini), sliced and diced1/2 c. Mushrooms (baby portabella) diced1 dash Black Pepper1 dash Salt (Season all)1 tbs. Olive oil4 small Flour Tortilla (Fajita style)Any other vegetable may be diced and added to your liking. This recipe is one that I have found has a lot of flavor and is quick and easy to make and fills you up.
Directions
Slightly heat olive oil in a medium to large skillet. Add Eggplant and mushrooms first. Sautee for a 1 to 2 minutes on medium heat. Add remaining ingredients. Cook until all veggies are soft (but not mushy). Remove from heat and set aside.

Lightly oil each Tortilla and add to pan, on medium heat allow each tortilla to lightly brown.

Serve veggies on tortilla.
