Blueberry Bread Pudding

8 slices Koepplinger's Lite 100% Whole Wheat BreadI Can't Believe it's Not Butter Spray1 Cup original Egg Beaters1 Cup frozen (or fresh) blueberries2 Cups skim milk3/4 cup Splenda1 tsp ground cinnamon1 tsp vanilla extract
Makes four servings
Preheat oven to 350 degrees
Break bread into small pieces into 8 inch square baking pan. Spray butter spray over surface of bread pieces.
In a medium mixing bowl, combine Egg Beaters, milk, Splenda, cinnamon, and vanilla. Beat until well mixed. Pour over bread and lightly push down with a fork until bread is covered and soaking up the egg mixture.
Bake in the preheated oven for 45 minutes or until the top springs back when lightly tapped.
