Moe's Barley Chili (Chicken or Mushroom)

Ingredients
4 Chicken Thighs, skinned removed1.5 c. Barley (dry)1 can tomato sauce1 can tomatoes (whole or diced)1/2 bell pepper1/2 onion1 can chick peas2 garlic cloves2 tbs chili powder2 tbs cumin2 tbs cajun seasoning6-7 c. watersalt to taste
Directions
Remove skin from chicken, season with garlic, cumin, salt, chili powder. Brown meat in 8-10 quart crock or pot for about 20 minutes, until chicken is done.

Remove chicken from bone and dice. Add chicken, bell peppers and onions and barley back to stock.

Add tomatoes, sauce and water and chick peas. Bring to a boil, then reduce heat to simmer for another 20 minutes.
