Ingredients
4 chicken breast - boiled in 12 cups water, shredded (Save the water!)4 large carrots cut into fat slices3 parsnips peeled1 cup chopped onion4 cups baby summer squash - sliced in fat slices2 cups bok choy - chopped12 cups chicken stock4 tbsp curry powderAny other spices/herbs you chooseSalt and pepper to taste
Directions
Put reserved water from boiling chicken in big pot. Add all other ingredients except salt. Bring to boil, simmer for 3-4 hrs until veggies are tender. Add salt to taste.
