Baked Oatmeal to Go

Ingredients
2 Eggs1 tsp Vanilla 2 Cups unsweetened applesauce1 banana, Mashed1/2 Cup honey5 cups, old fashioned rolled oats1/4 Cup flaxseed meal1 Tbls ground cinnamon3 Tbls baking powder1 tsp salt2 3/4 Cups skim milkOptional: raisins,m walnuts, chocolate chipsIf you want to add fruit, mix it into the batter.
Directions
Preheat oven to 350 degrees. Mix eggs, vanilla, applesauce, banana and honey together in a bowl.
Add Oats, flax, cinnamon, baking powder, salt and mix well with wet ingredients. Finally pour in milk and combine well.
Spray muffin tins or use muffin liners and pour evenly into tins.
Add toppings to the muffins before baking.
Bake 30 minutes or until toothpick in center comes out clean. Cool and enjoy, they can be frozen in Gallon zip lock freezer bags.
