2 cups broccoli2 cups cauliflower1 cup asparagus1.5 cups mushrooms1 cup sweet red pepper1.5 zucchini1/4 cup sliced yellow onion1/8 tsp salt1 tsp coconut oil
Directions
Place in shallow pan, drizzle with oil, salt & pepper.
Roast at 400* for 15 - 20 minutes.
