Pan-seared Halibut with bell pepper relish

Ingredients
1 1/2 tablespoons olive oil, divided4 (6 oz) Halibut fillets1/4 tsp salt1/4 tsp black pepper2 tbsp. chopped shallots1 tsp minced garlic1 c chopped yellow bell pepper1/2 c plum tomato1 tbsp. sherry vinegar1/2 tsp smoked paprika1 tbsp. flat leaf parsley
Directions
Heat a large nonstick skillet over medium-high head. Add 2 1/4 tsp oil to pan; swirl to coat. Sprinkle halibut evenly with salt and pepper. Add fish to pan and cook 3 minutes on each side or until fish flakes easily when tested with a fork. Remove fish from pan and keep warm.
Add remaining oil to pan; swirl to coat. Add shallots and garlic; saute 1 minute. Add bell pepper, tomatoes, vinegar, and paprika; saute 3 minutes or until peppers are tender. Sir in parsley. Serve with relish topping fish.
